Light Paso Robles Harvest Produces Exceptional, Bold Tasting Wine

The 2007 growing season in Paso Robles began with a cold, dry winter. The normal rainfall and dry spring led to early bud break. In spring, soils were depleted of their water, naturally reducing yields by 30%. Additionally, the berries were small, creating a greater skin to juice ratio, developing intense varietal flavors with rich tannins. In late September a drop in temperature delayed harvest, increasing hang time and allowing fruit to come to the perfect flavor maturity. Overall, while yields were light, the 2007 vintage produced well- balanced, great tasting wine.

Earthy Aromas of Bark and Wheat Capture the Essence of Paso Robles Wine Country 

This limited Paso Robles wine has earthy aromas of bark and white wheat, with a slight underline of dark cherry. The upfront acidity and grapefruit add to the complexity of this wine. The bold tannins and coco powder increase the length of the finish and pleasure of the tasting.

Winemaker Recommends Decanting this Wine to Further Enhance the Pleasure of the Tasting

This full-bodied Paso Robles red wine, will greatly benefit from decanting. When the wine comes in contact with oxygen, the aromas in the wine are released. The decanter in this case should be a wide bottomed decanter, to allow more oxygen to wine surface area. This wine in a beautiful crystal decanter would be the perfect ambience for your table while tasting.
